Talks@Willoughby presents Hideo Dekura
12:30pm, Tuesday 19 June 2012 The Art Space on The Concourse 409 Victoria Avenue, Chatswood $10 per personIn a special Talks@Willoughby event, Master Sushi chef Hideo Dekura will speak his new book, Encyclopedia of Japanese Cuisine, and present a cooking demonstration at 12.30pm, Tuesday 19 June, at The Art Space on The Concourse.
Born in Tokyo, Japan, Hideo Dekura’s culinary training began in his parent’s restaurants when he was still at school, where he learnt the principles of sushi and kappo-ryori food preparation, cooking and presentation. At the same time, Hideo studied the philosophy of tea ceremony cuisine, Calligraphy and flower arrangement under the tutelage of Master Teacher Shishikura Soken.
After many years of cooking and demonstrating in Japan, Europe and the United States, Hideo moved to Sydney in 1974 where he established his catering and consulting company, Culinary Studio Dekura, in Chatswood.
A culinary consultant, food stylist and author of several cookbooks, Hideo is widely recognised by the media and food industry as an expert on all aspects of Japanese Cuisine. As well as giving demonstrations, lectures and classes, Hideo makes significant contributions to cultural events in Australia and overseas.
